Carrot Cake Bites

Serious bites of heaven that will fill your carrot cake craving.     All you will need to make these dreamy bites:  -1 large carrot -1 cup pitted dates  -1 cup walnuts -1 cup coconut flakes  -1/2 teaspoon vanilla -1/2 teaspoon cinnamon  -1/2 teaspoon sea salt  -1/4 tsp nutmeg -1/4 tsp ground ginger   The process:Pulse coconut flakes in a food processor a few times until roughly chopped. Set about 1/4 of flakes aside for garnish/to coat balls if desired. Combine all other ingredients in the food processor with remaining or all coconut flakes.Blend until a sticky mixture forms. Roll into balls and keep in the fridge for up to a week for a perfect anytime pick me up!

Ingredients

1 large carrot

1 cup pitted dates

1 cup walnuts

1 cup coconut flakes (shredded works too)

½ tsp vanilla

½ tsp cinnamon

½ tsp sea salt

¼ tsp nutmeg

¼ tsp ground ginger

Instructions

1. Pulse coconut flakes in a food processor a few times until roughly chopped. (If using shredded coconut, skip this step.)

2. Set aside about ¼ of the coconut flakes to use for coating.

3. Add all remaining ingredients to the food processor along with the remaining coconut flakes.

4. Blend until a sticky, well-combined mixture forms.

5. Roll into balls, then coat in the reserved coconut flakes.

6. Devour immediately or store in the fridge for up to a week — the perfect anytime pick-me-up!
